Homemade kibbeh and other Lebanese recipes

Ingredients
Za’atar pita chips:
• 3 tortilla (or flat breads)
• 1 tsp. Za’atar
• 1 tbsp. olive oil
For the Kibbeh
Dough:
• 1 cup fine grain bulgur
• 1 cup minced meat (approx... 200gr)
• 1 small finely grated onion
• 1 tsp. salt
• 2 tsp. cumin
• A bunch of chopped parsley
• A bunch of chopped mint
• Sunflower oil for deep-frying
Filling:
• 1 tbsp. olive oil
• 150 gr minced meat
• 2 tbsp. roughly chopped chickpeas
• 1 tsp. salt
• 2 tsp. cumin seeds
• 1 tsp. coriander seeds
• 1 tbsp. tomato sauce
Tabbouleh salad:
• 1 cup boiled coarse grain bulgur (Dark)
• A bunch of chopped parsley
• A bunch of chopped mint
• 1 grated clove garlic
• lemon juice
• ½ chopped chilli pepper
• 3 tbsp. olive oil
Directions
STEP 1 Start by making tabbouleh salad. Combine all ingredients in a large bowl and mix to combine. Cover and let it sit in the fridge (you can make this step 1 or 2 day ahead). The longer it sits the better it tastes.
STEP 2 Continue with kibbeh. Add the dough ingredients in a mixer and mix until well combined. If the dough is a bit stiff add a tablespoon of water). Cover and set aside
STEP 3For the filling, add the olive oil in a shallow pan and fry the coriander and cumin seeds until fragrant. Add the chickpeas, tomato sauce, minced meat and salt. Fry until the meat is cooked through
STEP 4 To assemble the kibbeh patties, wet your hands and take a ping-pong ball size from the dough. Make a dwell in the middle by using your index finger and move it around to open it (see pic.). Fill the hole with a teaspoon from the filling and close it carefully in order all the filling stays inside. Give it an oval shape by using your palms (see pic). Repeat this step until all the dough is finished
STEP 5 Heat the oil and fry the kibbeh five at a time until golden brown. Place the patties over a kitchen paper to drain excess oil
STEP 6 Now that tabbouleh salad and kibbeh patties are ready, continue with the pita chips. Combine za’atar with olive oil and brush the tortilla/flat bread. Cut into triangles and bake in the oven, Grill setting for 5 minutes. Serve the kibbeh accompanied with hummus, tabbouleh, pita chips, hummus and baba gannoush.
